Bhaiganie 

This is a simple, delicious and additive snack that you can enjoy anytime, especially during the day while we fast for the holy period of Diwali.

Ingredients :

1 Large Eggplant

¾ Cup Ground Split Pea Powder

4 Tbsp Flour

½ Tsp Ground Toasted Geera

1 Tbsp of Salt

½ Tsp Salt (Additionally)

½ Tsp Ground Garlic

½ Tsp Ground Onions

½ Tsp Minced Chadon Beni

¾ Cup Water

Method

Slice Eggplant into ¼ Inch Slices.

Drizzle 1 Tbsp of salt over the eggplant slices and allow the salt to draw out the excess moisture in the eggplant. Let stand (For about 15 Minutes)

Meanwhile, Mix All Ingredients together into a batter consistency.

Place Eggplant slices into the batter and cover both sides properly. Then fry in the hot oil turning. from side to side, maybe about 1 Minute on each side.

Serve hot while crispy drizzled with a little Tamarind or even mango chutney.
