Tomato and bell pepper Bruschetta

An Easy and Quick snack that is filled with a fresh and robust flavor all the way and can be done in under ten minutes and served on toasted French bread or even pita chips.

Ingredients:

Salsa

3 large tomatoes, seeded and small diced

1 Small bell pepper, seeded and small diced

1 Small bell pepper, seeded and small diced

1 Small bell pepper, seeded and small diced

3 Tbsps. Onion small diced

1 Tbsp. fresh lime juice

1 Tbsp. olive oil

1 Tsp. minced fresh Chadon Beni

2 Cloves of Garlic Minced

2 Tbs of Balsamic Vinegar

– One Loaf of French bread

Method

For Salsa:

Combine all chopped peppers, onions as well as tomatoes and garlic in a medium bowl.

Season with salt and pepper and add the chadon beni, olive oil, balsamic vinegar and lime juice. Stir to combine and taste for salt.

For Toasted bread:

Preheat oven. Cut Bread into small ½ Inch circular rounds, and drizzle with oil. Sprinkle with salt and pepper and toast in oven for until crisp.  Then remove from oven and top each with tomato bell pepper salsa.
