Carrot Jam
This savory but minimally sweet carrot jam is a great condiment that you can make at home in large qualities and enjoy anytime to accompany with crackers or even warm toast perfect for breakfast.
Ingredients:
1 pound carrots, peeled
¼ cup, Water
2cups sugar
Zest of 1 lemon
Juice of 2 lemons
10 whole almonds, chopped
2 tablespoons grape juice.
1 Tbsp of Softened Butter
Method
Slice the carrots and put them in a saucepan covered with water. Boil until very soft, then run through a food mill to puree. Stir the sugar into the puree in a saucepan. Add the lemon zest and lemon juice, bring to a boil, and cook until glossy and jammy. Remove the pan from the heat and stir through the chopped almond, the grape juice and butter.
