Strawberry Nut Bars
Ingredients:
Bars:
2 ¼ cups almond flour
½ cup equivalent sweetener
¾ tsp baking soda
¾ tsp salt
¾ tsp cinnamon
2 chia eggs*
¾ tsp vanilla
½ cup nut butter, slightly melted (I used almond butter)
3 Tbsp dairy free milk (I used almond milk)
Topping:
¾ cup strawberry jam (recipe below)
1 cup chopped pecans
½ cup chopped unsweetened coconut flakes
2 Tbsp coconut oil
2 Tbsp equivalent sweetener
1 tsp cinnamon
Instructions
1. Preheat oven to 350 F.
2. To make the bars, combine the dry ingredients in a large bowl.
3. In a separate bowl, combine the wet ingredients and add them to the dry ingredients.
4. Mix well to combine and press the mixture into an 8×8″ pan lined with parchment paper.
5. Spread the strawberry jam over the bars.
6. To make the topping, combine all of the topping ingredients and sprinkle over the top of the strawberry jam.
7. Bake for 20-25 minutes (cover with foil if the topping starts to get too dark).
8. Allow to cool slightly and then cool completely in the refrigerator (about 1-2 hours).
