Sweet Potato Stuffed Fish Involtini
Ingredients:
For Fish
6 White Fish Fillets (frozen)
2 Tbsp. dill, chopped
1 Tbsp. garlic, minced
1 Tbsp. lime juice
½ Tbsp. paprika
Salt & pepper To Taste
For Potato Stuffing
1 cup sweet potato, boiled
3 Tbsp. raisins
2 Tbsp. cashew
2 Tbsp. butter
Dash cinnamon
2 Tbsp. chives, chopped
2 Tbsp, celery, chopped
Salt & pepper To Taste
Method:
1. Place white fish fillets on dry tissue and pat dry to remove excess moisture.
2. Season with salt, pepper, dill, garlic and lime juice and gently rub paprika on the surface of the fish.
3. For the potato stuffing, mix all the ingredients together until it binds
4. Lay the fillets on a cutting board and place 1 Tbsp. of the stuffing on the surface of the fish and roll sushi style. Secure with a tooth pick and place on a greased sheet pan. Bake for 12 minutes at 350ºF.
5. Serve with tamarind sauce and a light salad.
