Sautéed Okro and Tomato Casserole

Sautéed Okro and Tomato Casserole 

We all grew up eating okros. Here is a slightly different variation of okro choka, but done with fresh tomatoes.

Ingredients Needed

4 Cups. sliced okro
5 cloves garlic (crushed)
3 Tbsp of Vegetable Oil
1 ½ Cup  chopped onions
3 Cups. tomatoes, fresh , Large Diced

1 Tbsp of Freshly Picked Thyme

1 Tbsp of minced pimentos

Salt and Black Pepper to taste.

Method

Place a large sauté pan over high heat. Add the Veg oil and place the garlic and onions in. Saute for three minutes until onions are translucent. Add the pimentos and okro. Sauté, stirring frequently for three minutes then add the tomatoes. Lower heat to medium and stir to gently cook the tomatoes. Add the thyme and cook additionally for 15 to 20 minutes. Lower heat and season with salt and pepper to taste. Remove from heat and serve. This is excellent to have with boiled rice, baked potatoes or even buss up shot roti.
