Definition for Shark and bake
Known as a must have when you visit Trinidad’s most famous beach, Maracas. Shark and bake is definitely a favorite of the locals and tourist alike. A fried bake or dough forms the humble sandwich abode for freshly caught shark from the ocean that is crisply fried with a cornmeal and flour coating and dressed with fresh slaw, diced pineapples, tomatoes, lettuce and sauces varying from garlic to tamarind. It has been named one of the top ten sandwiches in the world by Chef Andrew Zimmern.
