Melon Three O’ – Parisian Honey Dew, Cantaloupe and Diced Watermelon Prosciutto, Frisee Lettuce, Balsamic Glaze, Paw Paw Coulis, Fresh Shaved Parmesan, Crisp Pork Bits.

Melon Three O’ – Parisian Honey Dew, Cantaloupe and Diced Watermelon Prosciutto, Frisee Lettuce, Balsamic Glaze, Paw Paw Coulis, Fresh Shaved Parmesan, Crisp Pork Bits.

¼ Cup Diced Watermelon

1 Small Honey Dew Melon

1 Small Cantaloupe

1 Cup of  diced Ripen Paw Paw

½ Cup of Orange Juice

½ Cup Balsamic Vinegar

3 Tbsp. of Honey

1 Head of Frisee Lettuce

2 Oz of Crispy Bacon Bits

2 Oz of Honey Roasted Almonds

1 Oz of Freshly Shaven Parmesan Cheese

2 Oz of Prosciutto Ham

Salt and black pepper

Method

Place paw paw into a food processor and add the orange juice. Process until smooth. Season with a dash of salt and black pepper to balance sweetness.

With a partisan melon baller, scoop out three balls each from the cantaloupe and honey dew melon. Set aside.

Make the balsamic dressing by adding the honey to the balsamic vinegar and mixing until thoroughly combined. Add additional honey if you want it sweeter.

To plate up the dish, place a leaf frisee lettuce at the top corner of the plate and lay down three balls of the cantaloupe, followed by the diced water melon and then the balls of the honey dew. With a small spoon, make a rough semicircle spread of the paw paw coulis around the melons. Drizzle the balsamic honey vinegar dressing thinly over the top of the paw paw and sprinkle the roasted almonds randomly around, as well  as the bacon bits. Roll a thin piece of prosciutto and place between the melon and honey dew and place two thin strips of parmesan cheese atop for garnish.
