Sweet Potato Balls
Today’s dish is all about sweet potato and a fun way that you can easily boil, stuff and fry it with a beautiful crusty exterior that is packed with loads of flavor.
Ingredients:
4 lbs boiled (peeled) sweet potatoes
2 tbsp of salt
1 tbs. black pepper
1 tin of whole olives (medium chopped)
1 cup shredded cheddar cheese
¼ cup chopped parsley
Oil for frying
1 ½ cup of milk
1 ½ cup flour
2 cups bread crumbs
Method
Take potatoes and place salt, pepper, parsley and crush thoroughly.
Make small 2 oz balls and place cheese and olives in the centre and reform small stuffed balls.
Place balls in flour and dust, then place in the milk mixtre then bread in crumbs. Place in heated oil and fry until golden brown
