Bacon Wrapped Jerk Shrimp with Sorrel Dipping Sauce
Well it’s the season of Christmas and of course Pork is quite ubiquitous at this time. In this case bacon is another loveable pork item that lends itself very well to other ingredients. But what better that Bacon Wrapped Jerk Shrimp. Do I have your attention now? Oh yes let’s get started.
Ingredients:
· 1 Dozen Shrimp – shelled and deveined
· 1 Tsp of Salt
· 1Tsp of Black Pepper
· 1 Tbsp of Jerk Seasoning
· 2 Tbsp of Minced Chadon Beni
· 6 Slices of Bacon – Cut in halves
· 12 Tooth Picks
· 1 Cup of Sorrel Juice
· ¼ Cup of Honey
Method
Preheat oven to 350 Degrees Fahrenheit.
Foil a medium baking tray and set aside.
In a Medium Bowl, add your shelled and deveined shrimp. Add all your seasoning ingredients and stir to combine. Carefully wrap each shrimp with a half piece of bacon and secure with by skewering a tooth pick through it. Place on your foiled baking tray and continue with the rest of the shrimp. Put tray into the oven and bake for 8 Minutes.
Meanwhile, to make the sorrel sauce, add the juice and the honey into a small sauce pan and simmer for on medium heat until it has cooked to half its quantity. When done pour into a dipping bowl.
Remove your shrimp from the oven and place on a platter, add your dipping sauce and enjoy.
