Ingredients needed:

3 cups of cooked qunioa

1 tablespoon fresh ginger grated

1 tablespoon fresh garlic grated

1 tablespoon sesame oil

3 tablespoons of soy sauce

Cup of carrots chopped

Cup of mushrooms cut up

1 pound of chicken breast cut up in cubes

8 strands of scallions

Pink salt (optional)

Greek inspired chicken with cucumber sauce by Loraine Lorika

Ingredients:

Sauce:

1 container nonfat green plain yogurt

1 peeled cucumber grated

5 grain garlic grated

2 tsp of cumin

1 sprinkle of salt

 

Chicken:

1 pound of chicken breast

1 tablespoon olive oil

5 grain garlic grated

1 tsp salt

1 tsp chili pepper flakes

1 tsp oregano

1 tsp parsley

½ a lemon

Italian Chicken Sausage Soup by Loraine Lorika

Ingredients needed:

1lb chicken sausage (cut up)

1 tablespoon olive oil

6 vine ripe tomatoes

½ an onion chopped

1 bag of spinach

10 cloves of garlic grated

3 cups cooked couscous

2 teaspoons of red pepper flakes

2 teaspoons of basil

2 teaspoons of oregano

Pink salt to taste

Ahhhhhhhh I met Queen @vickigunvalson, I am still in awe! I’ve been a fan of hers since day one, but now I am an even bigger fan becuase of her warm, cool, down to earth personality. I am addicted to reality tv and @bravotv is in my top three tv channels. Meeting Vicki felt like reuniting with a friend, because I have been watching her on tv and expierencing her journey at the same time. Steve has to be the coolest ever, he even enquired about my drink. I even suggested that he try It. It was a pleasure to meet them both. Fashion week in NYC

It was bitterly cold out but New York was set to host a magnificently steamy week of fashion. The stars flocked to the city to preview their favorite designers and models. I had the honor of attending one of Style Fashion Week’s shows, all of their shows were held at Cipriani Dolci, a befitting place with opulent architecture. As I entered a procession of tall, stunning models were heading towards the catwalk. I was instantly captivated by their presence and demeanor and this set the tone for my very first fashion event.

Here is how the evening went:

After a break (from previous fashion show), everyone was seated for the next show that featured the collection of three designers.  This show was kicked off by the renowned singer Amanda Holley, who did an excellent job of swaying the listeners to her soulful rhythms, then it was time for fashion! When the first model came on stage everyone stared, then another joined her and stood beside her, and I thought to myself she looked like the first, then to my surprise, both models were joined by yet another who looked like the first and the second models. Yes folks, the show open with triplets, and with this an audible gasp was heard from the audience. Oh yes, what an opening!!!. As the models strutted down the long runway, I could not believe I was there, the lights, cameras, stylish looking people, it was all so much to take in, but in a GREAT way. All three designers had their unique way of showcasing their collection.

After the show was over, everyone was asked to leave their seats to prepare for the next show. In the meantime, I floated around and absorbed the ambiance and activity occurring in the room.  On both sides of the room, there were huge banners with the word fashion week and a multitude of groups took turns being photographed in front of the backdrop. As I was walking out of the room the other show was starting. I was happy to have been privileged to experience this spectacular event.

Soba Noodle and Chayote Salad Dressed with a Lemon Infused Coconut Oil Vinaigrette

Yield: 2 Portion

 

Ingredients Needed

  • 4 Oz of Boiled Soba Noodles ( Buckwheat Noodles )
  • 2 Oz of Cabbage, Sliced Thinly
  • 2 Oz of Julienned Carrots
  • 2 Oz of Julienned Chayote
  • 2 Tbsp of Roughly chopped Cilantro
  • 2 Tbsp of Thinly Sliced Chadon Beni
  • ¼ Cup of  Julienned Red Bell Peppers
  • 3 Tbsp of Lemon Infused Coconut Oil
  • 2 Tsp of Rice Wine Vinegar
  • 1 ½ Tbsp of Soy Sauce
  • 2 Tbsp of Freshly Chopped Chives
  • ¼ Tsp Chili Flakes
  • Salt & Black Pepper to Taste
Method
 
Place Noodles in a medium bowl, add the cabbage, chayote, cilantro, Chadon Beni and bell peppers.
 
In a small bowl, whisk together the lemon infused coconut oil, rice wine vinegar, soy sauce, chives and chili flakes.
 
Pour vinaigrette atop the noodle salad. Season with salt and black pepper and toss to combine.
 
To serve, place in a salad bowl and enjoy as a light brunch item or even as an accompaniment with a meal.
